Strawberries (Fragaria x ananassa) contain compounds with beneficial health effects in humans. The quality and organoleptic characteristics of the fruit depend on the genotype and environmental factors during cultivation. This study evaluated the effects of global solar radiation (GSR), average monthly air temperature (AMT), and effective heliophany (EH) on fruits of Fragaria x ananassa cvr. Camino Real, harvested in Chaco, northeastern Argentina, from August to November 2024. Total soluble solids (TSS), titratable acidity (TA), maturity index (MI), pH, water content (WC), total polyphenol content (TPC), total anthocyanin content (TAC), and antioxidant capacity (AC) were also measured. At the beginning of harvest time, TSS values were higher (p ≤ 0.05) but decreased toward the end of the season (from 6.0±0.0 to 5.67±0.29 °Brix), indicating a negative correlation with environmental factors. On the contrary, TA increased over the end of harvest time (from 0.681±0.010 to 0.69±0.053 % citric acid) while pH gradually declined (3.76±0.01 to 3.64±0.02) during the same period. MI was 8.00 and WC was between 90.0±0.78%-91.9±0.56% during the harvest period. TPC significantly increased (141.29±7.20 to 144.97±4.12 mgGA/100gFW), correlated with AMT, GSR, and EH. TAC increased by 8.6% in November (p ≤ 0.05), and AC was also higher at the end of harvest (52.65±1.61%, p ≤ 0.05), finding a significant correlation with EH and GSR. Regression models confirmed significant relationships between TPC and the environmental variables analysed. The principal component analysis (PCA) indicated that warmer months and higher light intensity (October and November) favoured the synthesis of polyphenols, anthocyanins, and antioxidant compounds. This study shows that the organoleptic and functional quality of strawberries is related to the environmental conditions recorded during the period analyzed, providing useful information for defining management and harvest strategies.

RESUMEN
Las frutillas (Fragaria x ananassa) contienen compuestos con efectos benéficos para la salud humana. La calidad y las características organolépticas del fruto dependen del genotipo y de los factores ambientales durante su cultivo. Este estudio evaluó los efectos de la radiación solar global (GSR), la temperatura media mensual del aire (AMT) y la heliofanía efectiva (EH) sobre los frutos de Fragaria x ananassa var. Camino Real, cosechados en Chaco, noreste de Argentina, de agosto a noviembre de 2024. Se midieron sólidos solubles totales (TSS), acidez titulable (TA), índice de madurez (MI), pH, contenido de agua (WC), contenido total de polifenoles (TPC), contenido total de antocianinas (TAC) y capacidad antioxidante (AC). Al inicio de la cosecha, los valores de TSS fueron más altos (p ≤ 0,05), pero disminuyeron hacia el final de la temporada (de 6,0 ± 0,0 a 5,67 ± 0,29 °Brix), lo que indicó una correlación negativa con los factores ambientales. Por el contrario, TA aumentó al final de la cosecha (de 0,681 ± 0,010 a 0,69 ± 0,053% de ácido cítrico) mientras que el pH disminuyó gradualmente (3,76 ± 0,01 a 3,64 ± 0,02) durante el mismo período. MI fue de 8,00 y AC entre el 90,0 ± 0,78%-91,9 ± 0,56% durante el período de cosecha. TPC aumentó significativamente (141,29 ± 7,20 hasta 144,97 ± 4,12 mgGA/100gFW), correlacionado con AMT, GSR y EH. TAC aumentó 8,6% en noviembre (p ≤ 0,05), y AC también fue más alta al final de la cosecha (52,65 ± 1,61%, p ≤ 0,05), hallándose correlación significativa con EH y GSR. Los modelos de regresión confirmaron relaciones significativas entre el TPC y las variables ambientales analizadas. El análisis de componentes principales (PCA) indicó que los meses más cálidos y la mayor intensidad lumínica (octubre y noviembre) favorecieron la síntesis de polifenoles, antocianinas y compuestos antioxidantes. Este estudio demostró que la calidad organoléptica y funcional de las frutillas estuvo relacionada con las condiciones ambientales registradas durante el período analizado, proporcionando información útil para definir estrategias de manejo y cosecha.
